Peanut Butter Cinnamon Balls (GF, Vegan)

Makes between 10-14 balls…depending how big you like your balls – enjoy!

INGREDIENTS
1C pitted dates
1C natural crunchy Peanut Butter
3 tbsp heaped chia seeds OR psyllium husk
2 tbsp ground cinnamon
1/4C melted coconut oil

METHOD
Soak the dates in boiling water for 5-10 minutes

Meanwhile, in another large bowl, mix the peanut butter, chia or psyllium, cinnamon and melted coconut oil together.

After the dates have softened, remove the water from the bowl, give the dates a little squeeze and place into a food processor/blender.

Pop the blitzed dates in with the rest of the ingredients and stir until the mixture becomes thick enough to roll into balls!

Some natural peanut butters have more oils than others which may affect the consistency of the mixture. If it is too ‘oily’, add some more chia/psyllium/cinnamon

Roll the mixture into balls and set in the freezer.

These are great as snacks on the go, alongside a coffee or tea, chopped up on top of smoothie bowls/dipped in chocolate…there are no rules!
