Virgo Nourish Bowl (GF, Vegan)

I recently came across this article, talking about the various star signs and what their favourite foods/eating style might be like. Read the full article here.

I have called this the Virgo Nourish Bowl as I felt this dish represented to Virgo style most accurately. “Virgos have a sensitive stomach, and they should be careful about the food they eat….so they need to consume a lot of raw vegetables and fruit to help digestion…They hate to throw food away, so they often successfully set out on missions to prepare “something from nothing” using all of the leftovers from their fridge.” Exactly what I did here. The raw grated vegetables make a meal super kind to the stomach.

Now let’s get to it – I made this randomly one day, so let’s say ‘serves 1’ shall we!

INGREDIENTS
1/2 Avocado
1 carrot, grated
1/2 zucchini, grated
Handful baby spinach leaves
Handful flat leaf parsley, torn
Quinoa (I use the pre cooked quinoa from the supermarket, I know it is healthier to cook your own, however this is for a quick meal)
Firm tofu cut into cubes (however much you feel like, you can store baked tofu in the fridge and use for meals the next day)
Juice from 1 lemon
2 Tsbp hulled tahini
1 Tbsp water
1 Tbsp olive oil
1 Tsp ground paprika
Salt and pepper

METHOD
Prepare the tofu first. In a small bowl, mix together the olive oil, paprika, salt and pepper to make a marinade. Rub onto tofu, lightly coating each cube. Place onto a lined baking tray and pop into a 180degree fan forced oven for 10-15 minutes, depending on how crispy you want it!

Meanwhile, heat the quinoa and place it into a bowl with the baby spinach, grated carrot, zucchini and parsley.

For the guacamole, simply scoop out the avocado flesh, mash with a fork, add a generous squeeze of fresh lemon and season with salt and pepper.

The hero: Tahini dressing. Mix together the tahini, remaining lemon juice and water together.

Once the tofu has finished, place on top of the salad, top with guacamole and dressing. A great meal when your tummy feels a bit upset/you have extra tofu to use.
