Being coeliac, the choice of wraps isn’t exponential – unless you feel like paying one hundred dollars (fine – slight exaggeration, however they’re not cheap). These ‘Be Free’ multigrain wraps are pretty good. Check them out here.
I love toasted wraps with tuna and a bit of cheese, sweet chilli and spinach however that’s not why we are here. Here for the pizza!
Serves 1 medium hungry person, maybe 2 if very hungry (double ingredients)
1 X wrap (or if you are a lucky gluten eater, use one of those, save your pennies!)
A light slather of tomato sauce or tomato paste
Torn leg ham (a lazy gals ‘what do I have in the fridge thing)
Some cherry tomatoes
Handful FRESH (the hero) basil, torn
Handful shredded cheddar and parmesan
I do have a tip for all those who may make the same mistake that I did.
Line a baking tray with aluminium foil and NOT baking paper. Otherwise, when you grill this baby, the paper will catch alight and cause a fire good enough to burn marshmallows – and your house.
I recommend also making the pizza on the lined baking tray so you don’t have to do that awkward “don’t fall off toppings” dance while you try and lift your masterpiece onto the tray.
These are probably just common sense things – however…”the thing about common sense is, it isn’t that common (Winston Churchill quote – can’t claim that). My house didn’t burn down by the way.
Put all toppings on pizza, grill in oven for approx 5-10 minutes, depending how hot your oven is. Really just to melt the cheese and crisp up the base and tomatoes.
I don’t even know why I am doing a blog post about this as there are more exciting toppings and bases you can make. However, sometimes I am just a lazy human and I remember making this and was like ‘this is really simple and tasty’. Sometimes I get too fancy with my ingredients forget simple is good too.
